Chipotle Baked Tofu Salad & TV on the Radio
I’ve recently become obsessed with baked tofu. If tofu is baked well, it comes out slightly crispy with an almost meat-like quality to it and adds significantly to a dish that you want to keep vegetarian. This is a great recipe that would make a nice side dish to a summer meal or could even serve as a light lunch.

Ingredients:
Block of Firm Tofu
Chipotle Sauce (from Grocery Store or homemade)
1 Red Pepper
1 Red Onion
Corn (Two ears if it’s in season or if not a can of corn)
1 Tomato (Beef Steak, heirloom or whatever seems tastiest in your local market)
1 Lemon
1 Can of Black Beans or half a cup of Dry Black Beans
Fresh Cilantro
Pepper and Salt to taste
Directions:
Cut Tofu into bite size cubes. Marinate Tofu in Chipotle Sauce for atleast one hour. After marinating, pat tofu dry and bake on 350 until outside begins to brown. Cut up Onion, Tomato, Red Pepper and add to a mixing bowl. Add beans and can of corn (or cooked fresh corn). Snip cilantro over the top and add baked tofu. Squeeze a lemon over it, mix, and serve.
