Brandy, Mushroom, Gruyere Crepes & Sharon Van Etten
Here is a nice filling for the crepe batter you made over the weekend.

I’ve seen her a few times over the last year or two but never listened to her recorded music until recently for fear that it wouldn’t replicate that raw emotion you see in her performance. Ingredients: Serves 4
8 oz White Mushrooms, sliced fine
1/2 a Small Onion, diced (White or Spanish)
1 Clove Garlic, diced
2 Tb Olive Oil
2 Shots of Brandy
Pinch of Thyme
Pinch of Sage
Pepper & Salt to Taste
Gruyere according to preference
Directions:
Heat Oil on Medium on a Skillet/Pan. Add garlic and onion and sautee until it begins to brown.
Add mushrooms, thyme, and sage. Cook for a few minutes until liquid from mushrooms begins to appear. Add Brandy & Salt and turn to high. Cook on high until liquid starts to disappear and caramalize.
Turn off heat and add gruyere. Fill Crepes or Omelettes and enjoy!
